Ingredients
  

Steak
  • 12 ounces sirloin steak cut into 1-inch cubes
  • 1 tablespoon avocado oil divided
  • 1 tablespoon unsalted butter divided
  • 2 cloves garlic minced
  • 2 tablespoons low-sodium soy sauce divided
  • 1 teaspoon toasted sesame oil divided
  • 1/2 teaspoon kosher salt divided
  • 1/4 teaspoon black pepper divided
Fried Rice and Vegetables
  • 2 cups cooked brown rice cold
  • 2 large eggs lightly beaten
  • 2 medium zucchini cut into half-moons
  • 2 medium carrots cut into matchsticks
  • 8 ounces white mushrooms sliced
  • 3 green onions thinly sliced
  • 1 tablespoon avocado oil divided
Creamy Sesame Sauce
  • 1/4 cup mayonnaise
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1 tablespoon water as needed
Finishing
  • 1 tablespoon sesame seeds for serving
  • 1 green onion sliced, for serving

Method
 

Prepare
  1. Stir the mayonnaise, soy sauce, rice vinegar, sesame oil, smoked paprika, garlic powder, and water in a small bowl. Add water a teaspoon at a time until the sauce drizzles easily.
  2. Pat the steak cubes dry. Season with half the salt and pepper, then toss with 1 tablespoon soy sauce and 1/2 teaspoon sesame oil.
Cook
  1. Heat a large skillet over medium-high heat. Add 1/2 tablespoon avocado oil and the steak in a single layer. Sear for 2 to 3 minutes per side, turning until browned and the thickest pieces reach 135°F for medium-rare or 145°F for medium.
  2. Transfer the steak to a plate and add the butter and garlic to the skillet. Cook for 30 seconds, scraping up the browned bits, then spoon the garlic butter over the steak.
  3. Heat the remaining avocado oil in a second skillet over medium-high heat. Add the zucchini, carrots, and mushrooms. Cook for 4 to 5 minutes until the zucchini is tender-crisp and the mushrooms are browned.
  4. Push the vegetables to one side. Add the beaten eggs and scramble until just set, about 1 minute.
  5. Add the cold brown rice, remaining soy sauce, remaining sesame oil, and remaining salt and pepper. Toss everything together for 3 to 4 minutes, breaking up clumps, until the rice is hot.
  6. Divide the fried rice among four bowls. Arrange the steak over the top, then drizzle with the creamy sesame sauce and finish with sesame seeds and sliced green onion.

Notes

Refrigerate leftovers in airtight containers for up to 3 days, keeping the sauce separate when possible. Reheat the rice and steak in a covered skillet with 1 tablespoon water over medium-low heat; the steak is best when warmed just until hot.
