Ingredients

Kielbasa and Veggies
  • 1 pound Kielbasa sliced
  • 2 tablespoons Honey local
  • 3 cloves Garlic minced
  • 2 tablespoons Soy Sauce low-sodium
  • 1 each Bell Peppers (red & yellow) chopped
  • 1 cup Baby Carrots whole
  • 1 pound Baby Potatoes halved
  • 2 tablespoons Olive Oil light
Garnish
  • 2 tablespoons Fresh Parsley chopped

Equipment

  • Large Mixing Bowl
  • Baking Sheet
  • Parchment Paper

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and ensure the rack is in the center position.
  2. Prepare the vegetables and protein by slicing the kielbasa into rounds and halving the baby potatoes.
  3. Place the sliced kielbasa, bell peppers, baby carrots, and potatoes into a large mixing bowl.
  4. Drizzle the mixture with olive oil, honey, minced garlic, and soy sauce.
  5. Toss all ingredients thoroughly until the meat and vegetables are completely coated in the glaze.
  6. Spread the mixture onto a parchment-lined baking sheet in a single, even layer to ensure proper roasting.
  7. Roast for 25 minutes, pausing halfway through to stir the ingredients for even browning.
  8. Remove from the oven once the potatoes are fork-tender and the kielbasa edges are caramelized.
  9. Scatter fresh parsley over the hot tray and serve immediately.

Notes

For the best texture, ensure all vegetables are cut to a similar size so they finish cooking at the same time. You can store leftovers in an airtight container for up to three days, and they reheat beautifully in a skillet or air fryer to maintain the crisp edges of the kielbasa.
