Slow Cooking
- Place the beef stew meat and halved baby gold potatoes into the bottom of a 6-quart slow cooker.
- Season the beef and potatoes with salt, black pepper, and onion powder, then toss to coat.
- Pour the beef broth around the sides of the meat so you don't wash off the seasoning.
- In a small bowl, whisk together the melted butter, minced garlic, parsley, and rosemary.
- Drizzle the garlic butter mixture evenly over the beef and potatoes.
- Cover and cook on low for 7–8 hours or on high for 4–5 hours until the beef is fork-tender.
- Stir gently before serving to ensure the garlic butter coats every piece of beef and potato.
Notes
For the best texture, use gold potatoes as they hold their shape better than russets during long cook times. If you have time, sear the beef in a skillet for 2 minutes before adding to the crockpot to lock in extra flavor.
