  • 2 pounds boneless skinless chicken breasts even-size pieces
  • 3/4 cup BBQ sauce divided
  • 2 tablespoons apple cider vinegar 5% acidity
  • 1 tablespoon Worcestershire sauce standard
  • 1 teaspoon smoked paprika sweet variety
  • 1 teaspoon garlic powder not garlic salt
  • 1 teaspoon onion powder fine ground
  • 1/2 teaspoon kosher salt or to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

  1. Pat the chicken breasts dry and trim away any visible fat.
  2. Whisk 1/2 cup BBQ sauce with the apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Arrange the chicken in one layer in the slow cooker, placing the thickest ends near the outer wall.
  4. Pour the sauce mixture over the chicken and turn each piece to coat it evenly.
  5. Cover and cook on LOW for 4 hours, or until the thickest breast reaches 165°F and separates easily with a fork.
  6. Transfer the chicken to a rimmed plate. If the cooking liquid looks watery, spoon off some while leaving enough to moisten the shredded meat.
  7. Shred the warm chicken into thick strands using two forks.
  8. Return the chicken to the slow cooker, add the remaining 1/4 cup BBQ sauce, and toss until evenly coated.

Notes

Refrigerate the chicken with its sauce for up to 4 days or freeze for up to 3 months. Thaw overnight, then reheat gently with a spoonful of water or reserved cooking liquid if the sauce has tightened. Boneless chicken thighs may be substituted, but they will be richer and may need slightly longer to shred easily.
