- Place your skillet or griddle over medium-high heat until it is very hot to ensure a good sear.
- Divide the ground beef into four equal portions and press one portion directly onto one half of each flour tortilla in a thin, even layer.
- Season the beef generously with salt, pepper, and garlic powder to enhance the savory profile.
- Place the tortilla beef-side down onto the hot skillet and press firmly with a spatula for 2 to 3 minutes until a brown crust forms.
- Flip the entire tortilla over so the beef side is now facing up.
- Sprinkle the shredded cheese evenly over the cooked beef and fold the empty half of the tortilla over the filling.
- Grill the folded quesadilla for 1 to 2 minutes per side until the tortilla is golden brown and the cheese is completely melted.
- Remove from heat, slice into triangles, and serve immediately with onions, pickles, and sauce.
Notes
For the best results, use a higher fat content beef like 80/20 to ensure the meat stays juicy while it sears against the tortilla. If you prefer a crispier exterior, lightly brush the outside of the tortilla with butter or oil before the final flip. These are best served immediately but can be kept warm in a low oven if you are making a large batch for a crowd.
