Turkey
  • 1 1/4 pounds 99% lean ground turkey raw, for crumbling
  • 2 teaspoons neutral oil divided
Honey Garlic Sauce
  • 4 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 tablespoons water
  • 2 teaspoons cornstarch
  • 1/2 teaspoon black pepper
Garnish
  • 2 medium green onions thinly sliced
  • 1/4 cup cilantro chopped

Method
 

  1. Whisk the soy sauce, honey, rice vinegar, water, cornstarch, and black pepper in a small bowl until smooth.
  2. Heat a 12-inch skillet over medium-high heat for 2 minutes. Add 1 teaspoon oil and warm the cooked rice while the turkey cooks.
  3. Add the ground turkey and spread it across the skillet. Cook for 3 minutes, then break it into small crumbles.
  4. Continue cooking for 5 minutes, stirring occasionally, until browned, no longer pink, and 165°F in the thickest crumbles.
  5. Reduce the heat to medium. Add the remaining oil, garlic, and ginger, then stir for 1 minute until fragrant.
  6. Whisk the sauce again and pour it into the skillet. Simmer for 3 minutes, stirring often, until glossy and thick enough to coat the turkey.
  7. Remove the skillet from the heat and let it stand for 1 minute so the sauce settles around the crumbles.
  8. Spoon the turkey over warm rice and finish with the sliced green onions and chopped cilantro.

Notes

Store the turkey mixture and rice separately in airtight containers for up to 4 days. Freeze the turkey mixture for up to 2 months, thaw overnight, and reheat gently in a skillet with a splash of water.
