Ingredients
  

Rice
  • 1 cup long-grain white rice rinsed
  • 1 1/2 cups water for rice
Gumbo
  • 6 ounces andouille sausage 1/4-inch rounds
  • 1 pound large shrimp peeled, deveined, whole
  • 3 tablespoons vegetable oil for roux
  • 3 tablespoons all-purpose flour for roux
  • 1 cup yellow onion finely diced
  • 1/2 cup green bell pepper diced
  • 1/2 cup celery diced
  • 4 cloves garlic minced
  • 4 cups low-sodium chicken broth warmed
  • 1 tablespoon Worcestershire sauce for depth
  • 1 1/2 teaspoons kosher salt divided
  • 1 teaspoon smoked paprika smoky warmth
  • 1 teaspoon dried thyme dried leaves
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1/2 teaspoon black pepper freshly ground
  • 2 leaves bay leaves whole
  • 1/4 cup flat-leaf parsley chopped garnish

Method
 

Rice
  1. Combine the rinsed rice, water, and 1/2 teaspoon kosher salt in a saucepan. Bring to a boil, cover, reduce to low, and cook for 15 minutes. Turn off the heat and rest, covered, for 5 minutes.
Gumbo
  1. Heat a Dutch oven over medium heat. Add the sausage rounds and brown for 3 to 4 minutes, turning once. Transfer the sausage to a plate.
  2. Add the oil and flour to the pot. Cook over medium-low heat, whisking constantly, for 12 to 15 minutes, until the roux is deep brown and smells toasted. If black flecks appear, start the roux again.
  3. Stir in the onion, bell pepper, celery, remaining salt, black pepper, paprika, thyme, and cayenne. Cook for 6 to 8 minutes, until softened. Add the garlic and cook for 30 seconds.
  4. Gradually whisk in the warm broth, then add the Worcestershire sauce and bay leaves. Scrape up any browned bits and bring the gumbo to a gentle simmer.
  5. Return the sausage to the pot. Simmer uncovered for 12 to 15 minutes, until the vegetables are tender and the broth lightly coats a spoon.
  6. Lower the heat and add the whole shrimp. Cook for 3 to 5 minutes, stirring gently, until the shrimp are opaque, pink, and loosely curled.
  7. Remove the bay leaves. Spoon rice into bowls, ladle the gumbo over it, and scatter chopped parsley on top.

Notes

Refrigerate cooled gumbo and rice separately for up to 3 days. Reheat the gumbo gently with a splash of broth, then spoon it over hot rice; freeze for up to 2 months if needed, knowing the rice will soften slightly.
