Yakiniku Sauce
  • 0.25 cup soy sauce low sodium
  • 2 tbsp mirin sweet wine
  • 2 tbsp sake or dry sherry
  • 1 tbsp sugar granulated
  • 1 tsp toasted sesame oil aromatic
  • 2 cloves garlic finely grated
  • 1 tsp fresh ginger finely grated

Method
 

Prepare the Sauce
  1. In a small mixing bowl, whisk together the soy sauce, mirin, sake, sugar, sesame oil, grated garlic, and ginger until the sugar is completely dissolved.
Sear the Beef
  1. Place your cast iron skillet or grill pan over high heat and add the vegetable oil, swirling to coat the surface.
  2. Working in batches to avoid crowding, lay the thinly sliced beef in a single layer and sear for 1 minute per side until browned and caramelized.
  3. Remove the seared beef from the pan and set aside on a plate while you finish the remaining meat.
Glaze and Serve
  1. Reduce the heat to medium and pour the prepared sauce into the hot skillet, scraping up any browned bits from the bottom.
  2. Simmer the sauce for 1 to 2 minutes until it begins to thicken into a glossy glaze.
  3. Return the beef to the skillet and toss quickly to coat every slice in the savory sauce.
  4. Garnish with toasted sesame seeds and sliced green onions before serving immediately.

Notes

For the best results, freeze the beef for 30 minutes before slicing to get paper-thin pieces. Store leftovers in an airtight container for up to 2 days and reheat quickly in a hot pan.
