Ingredients
  

Sauce
  • 1/3 cup soy sauce low-sodium
  • 1/2 cup beef broth low-sodium
  • 2 tablespoons oyster sauce sauce depth
  • 1 tablespoon brown sugar packed
  • 1 tablespoon rice vinegar unseasoned
  • 1 tablespoon cornstarch sauce thickener
  • 1 teaspoon toasted sesame oil sauce aroma
  • 1/2 teaspoon black pepper freshly ground
Stir-Fry
  • 1 pound sirloin steak raw, thin strips
  • 5 cups broccoli florets bite-size
  • 2 tablespoons neutral oil divided
  • 4 green onions sliced, whites and greens
  • 1 tablespoon garlic minced
  • 2 teaspoons fresh ginger minced
  • 1 tablespoon sesame seeds optional garnish

Method
 

Main Skillet
  1. Whisk the soy sauce, beef broth, oyster sauce, brown sugar, rice vinegar, cornstarch, toasted sesame oil, and black pepper in a small bowl until smooth.
  2. Pat the beef dry. Heat 1 tablespoon of neutral oil in a 12-inch skillet over high heat until shimmering.
  3. Sear half the beef in a single layer for about 2 minutes per side. Transfer it, then repeat with the remaining oil and beef.
  4. Add the broccoli, cover, and cook for 3 to 4 minutes, stirring once, until bright green, browned in spots, and just tender.
  5. Add the garlic, ginger, and white scallion parts. Stir for 30 seconds, lowering the heat to medium if they start coloring.
  6. Return the beef and juices. Whisk the sauce again, add it to the skillet, and simmer for 2 to 3 minutes until glossy, thick, and just cooked through.
  7. Turn off the heat. Fold in the green scallion parts, transfer to bowls, and sprinkle with sesame seeds.

Notes

Refrigerate leftovers in an airtight container for up to 4 days and reheat gently so the thin beef stays tender. Freeze for up to 2 months if needed, but expect softer broccoli after thawing.
