Preparation and Searing
- Pat the diced beef dry with paper towels and season lightly with salt and pepper.
- Heat the vegetable oil in a large skillet over high heat until shimmering.
- Add the beef in a single layer, working in batches if necessary to avoid overcrowding.
- Sear the beef for 2–3 minutes per side until a dark brown crust forms, then remove from the pan.
Sauce and Finishing
- In a small bowl, whisk together soy sauce, water, brown sugar, honey, ginger, garlic, and cornstarch.
- Reduce the skillet heat to medium and pour in the sauce mixture, scraping up any browned bits.
- Simmer the sauce for 2 minutes until it thickens into a glossy, dark glaze.
- Return the beef to the skillet and toss thoroughly to coat every piece in the sticky sauce.
- Serve immediately over steamed rice and garnish with sesame seeds and green onions.
Notes
For the best texture, ensure the pan is smoking hot before adding the meat to get a proper sear without overcooking the center. Leftovers stay fresh in the fridge for up to 4 days and make for incredible meal prep lunches.
