  • 2 large eggs lightly beaten
  • 0.5 cup whole milk for moisture
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1 tsp salt sea salt
  • 0.5 tsp black pepper ground

Method
 

Prepare the Loaf
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, beaten eggs, milk, onion, garlic, salt, and pepper.
  3. Mix the ingredients by hand until just combined, being careful not to overwork the meat.
  4. Press half of the meat mixture into the bottom of the prepared loaf pan.
  5. Place the three hard-boiled eggs in a single row down the center of the meat.
  6. Top with the remaining meat mixture, pressing down firmly to seal the eggs inside the loaf.
Glaze and Bake
  1. In a small bowl, whisk together the ketchup, brown sugar, vinegar, and garlic powder to create the Best Meatloaf Glaze.
  2. Spread half of the glaze mixture evenly over the top of the meatloaf.
  3. Bake for 45 minutes, then remove from the oven to spread the remaining glaze on top.
  4. Return to the oven and bake for another 15–20 minutes until the internal temperature reaches 160°F.
  5. Let the meatloaf rest for 10 minutes before slicing to ensure it stays juicy.

Notes

For the best results, use 85% lean ground beef to ensure a moist texture without excessive grease. Store leftovers in an airtight container for up to 4 days or freeze individual slices for easy meal prep later.
