Ingredients

Meatloaf Base
  • 1.5 lb lean ground beef 90% lean
  • 2 large eggs lightly beaten
  • 1/2 cup Panko breadcrumbs plain
  • 1/2 cup Parmesan cheese freshly grated
  • 1/4 cup whole milk for moisture
Seasoning and Aromatics
  • 4 cloves garlic minced
  • 1 tsp Italian seasoning dried
  • 1 tsp onion powder fine
  • 1 tsp salt sea salt
  • 1/2 tsp black pepper cracked
  • 2 tbsp fresh parsley chopped

Equipment

  • 9x5 Inch Loaf Pan
  • Large Mixing Bowl
  • Measuring Cups
  • Measuring Spoons
  • Parchment Paper

Method

Preparation and Mixing
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk the eggs and milk together before adding the minced garlic, Italian seasoning, onion powder, salt, and pepper.
  3. Stir in the freshly grated Parmesan cheese and Panko breadcrumbs, letting the mixture sit for 2 minutes to hydrate the crumbs.
  4. Add the lean ground beef to the bowl and use your hands to gently combine the ingredients until just incorporated, being careful not to overwork the meat.
Baking
  1. Transfer the beef mixture to the prepared loaf pan and press it down lightly to form an even layer.
  2. Bake in the center rack of the oven for 45–50 minutes, or until the internal temperature reaches 160°F (71°C).
  3. Remove the meatloaf from the oven and let it rest in the pan for 10 minutes to allow the juices to redistribute before slicing and serving.

Notes

For the best texture, use freshly grated Parmesan cheese rather than the canned variety to ensure it melts smoothly into the beef. If you prefer a crispier exterior, you can bake the loaf on a rimmed baking sheet instead of a loaf pan.
