Searing the Steak
- Pat the steak cubes dry with paper towels and season generously with salt and pepper.
- Heat the olive oil in a large cast iron skillet over medium-high heat until it begins to shimmer.
- Add the steak bites in a single layer, working in batches if necessary to avoid crowding the pan.
- Sear the meat for 2 minutes without moving them to develop a deep brown crust.
- Flip the bites and cook for another 2 minutes until the edges are crisp and the center is medium-rare.
Finishing with Butter
- Reduce the heat to medium and add the cubed butter and minced garlic to the skillet.
- Stir the steak bites constantly for 1 minute as the butter melts and foams, coating every piece.
- Toss in the dried thyme and fresh parsley, then remove the skillet from the heat immediately.
- Serve the steak bites warm, drizzled with the extra garlic butter from the bottom of the pan.
Notes
For the best texture, ensure your skillet is smoking hot before adding the meat to lock in juices. Store leftovers in an airtight container for up to 3 days and reheat in a pan with a splash of beef broth.
