  1. Begin by heating two tablespoons of olive oil in your skillet over medium heat. Toss in the baby potatoes and season them with salt, pepper, and paprika. Sauté the potatoes for about 15 minutes until they are golden brown and fork-tender, then set them aside.
  2. While the potatoes rest, season your steak cubes generously with salt, pepper, and the dried herbs. Wipe the skillet clean and add one tablespoon of oil and two tablespoons of butter. Sear the steak in batches for 2 to 3 minutes per side until a deep crust forms.
  3. Turn the heat down to medium-low to prevent burning the milk solids in the butter. Melt the remaining butter in the center of the pan and add the minced garlic. Sauté the garlic for about 60 seconds until it smells incredible and turns lightly golden.
