Ingredients

Main
  • 1 lb steak cubed
  • 1 medium zucchini sliced
  • 3 tablespoons butter unsalted
  • 3 cloves garlic minced
  • 1 tablespoon olive oil extra virgin
  • 1/2 teaspoon salt fine
  • 1/4 teaspoon black pepper cracked
  • parsley garnish

Equipment

  • Large Cast Iron Skillet
  • tongs
  • Chef Knife
  • Cutting board

Method

Main Instructions
  1. Dry the steak cubes thoroughly using paper towels and season evenly with salt and pepper.
  2. Heat the olive oil in your skillet over medium-high heat until it begins to shimmer.
  3. Place steak in the skillet in a single layer and sear for 2 minutes until a dark crust forms.
  4. Transfer the seared meat to a plate and set it aside to rest briefly.
  5. Lower the heat slightly and melt the butter, then sauté the garlic for 30 seconds.
  6. Toss the zucchini into the garlic butter and cook for 4 minutes until it softens slightly.
  7. Slide the steak bites back into the pan and toss well to coat every piece in sauce.
  8. Heat everything together for 1 minute more before finishing with a sprinkle of fresh parsley.

Notes

For the best texture, ensure your skillet is very hot before adding the meat to prevent steaming. If you are using this for meal prep, undercook the zucchini slightly so it stays firm when reheated later in the week.
