Prep and Slow Cook
- Pat the beef stew meat dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Sear the beef in batches until a deep brown crust forms on all sides.
- Transfer the seared meat into the bottom of your slow cooker.
- In a small bowl, whisk together the beef broth, Worcestershire sauce, minced garlic, thyme, and rosemary.
- Pour the liquid mixture over the beef and top with the cubed butter pieces.
- Cover and cook on low for 7–8 hours or on high for 4–5 hours until tender.
- Stir the beef gently to incorporate the melted butter and garlic before serving.
- Sprinkle with fresh parsley and serve over mashed potatoes or rice.
Notes
For the best texture, ensure you sear the meat before slow cooking to lock in juices. Store leftovers in an airtight container for up to 4 days; the butter sauce will solidify but melts beautifully upon reheating.
