Prepare the Filling
- Brown the ground beef in a large skillet over medium-high heat until fully cooked, draining any excess grease.
- Stir in the BBQ sauce, honey, smoked paprika, and onion powder, simmering for 5 minutes until the sauce thickens and glazes the beef.
- Remove the beef from the skillet and set aside in a warm bowl.
Crisp the Tacos
- In a small bowl, mash the softened butter with minced garlic and dried parsley until well combined.
- Wipe the skillet clean and return to medium heat, spreading a thin layer of garlic butter on one side of each tortilla.
- Place tortillas butter-side down in the skillet, topping one half with a sprinkle of cheese and a generous spoonful of the BBQ beef.
- Fold the tortillas over and cook for 2 minutes per side until the shells are golden brown and the cheese is melted.
- Serve immediately while the shells are crispy and the garlic butter is fragrant.
Notes
For the best texture, use corn tortillas as they crisp up better with the garlic butter than flour versions. If making for a crowd, keep finished tacos on a wire rack in a 200°F oven to maintain crunch.
