Method
- Heat the oven to 425°F. Line a rimmed sheet pan with foil and set an oven-safe wire rack on top.
- Pat the chicken tenderloins dry with paper towels.
- Mix the brown sugar, smoked paprika, and garlic powder in a small bowl.
- Rub about half of the brown sugar mixture over the chicken.
- Wrap each tenderloin with half a bacon slice, placing the bacon seam underneath.
- Arrange the chicken on the rack without letting the pieces touch. Press the remaining sugar mixture over the bacon.
- Bake for 18 minutes, or until the chicken is nearly cooked through and the sugar coating is bubbling.
- Broil for 1 to 2 minutes, watching closely, until the bacon edges brown and the chicken reaches 165°F. Rest for 3 minutes before serving.
Notes
Refrigerate leftovers for up to 4 days and reheat them in a 375°F oven or air fryer to restore the bacon edges. Boneless chicken breasts may be cut into even strips, but thick-cut bacon is not recommended because the chicken can finish cooking before the bacon browns.
