  • 1 1/2 pounds chicken tenderloins about 12 pieces
  • 6 slices standard-cut bacon halved crosswise
  • 1/3 cup light brown sugar packed
  • 1 teaspoon smoked paprika for smoky flavor
  • 1 teaspoon garlic powder fine texture

Method
 

  1. Heat the oven to 425°F. Line a rimmed sheet pan with foil and set an oven-safe wire rack on top.
  2. Pat the chicken tenderloins dry with paper towels.
  3. Mix the brown sugar, smoked paprika, and garlic powder in a small bowl.
  4. Rub about half of the brown sugar mixture over the chicken.
  5. Wrap each tenderloin with half a bacon slice, placing the bacon seam underneath.
  6. Arrange the chicken on the rack without letting the pieces touch. Press the remaining sugar mixture over the bacon.
  7. Bake for 18 minutes, or until the chicken is nearly cooked through and the sugar coating is bubbling.
  8. Broil for 1 to 2 minutes, watching closely, until the bacon edges brown and the chicken reaches 165°F. Rest for 3 minutes before serving.

Notes

Refrigerate leftovers for up to 4 days and reheat them in a 375°F oven or air fryer to restore the bacon edges. Boneless chicken breasts may be cut into even strips, but thick-cut bacon is not recommended because the chicken can finish cooking before the bacon browns.
