Ingredients
  

Noodles
  • 8 lasagna noodles regular, not oven-ready
Seafood Filling
  • 12 ounces shrimp peeled, deveined, bite-size pieces
  • 8 ounces lump crabmeat drained, gently flaked
  • 3 tablespoons unsalted butter divided
  • 1 cup ricotta whole-milk, for filling
  • 1 large egg for binding
  • 3/4 cup Parmesan cheese grated, divided
  • 2 tablespoons fresh parsley chopped, divided
  • 1 tablespoon lemon juice for filling
  • 1/2 teaspoon kosher salt for filling
  • 1/4 teaspoon black pepper ground
  • 1/4 teaspoon red pepper flakes optional
Alfredo Sauce
  • 2 cloves garlic minced
  • 2 tablespoons all-purpose flour for thickening
  • 2 cups whole milk for sauce
  • 1/2 cup half-and-half for sauce
Topping
  • 1/2 cup mozzarella cheese low-moisture, shredded

Method
 

Noodles and Filling
  1. Heat the oven to 375°F and set a 9x13-inch baking dish nearby.
  2. Cook the lasagna noodles in boiling water until flexible but still slightly firm, 8 to 9 minutes. Drain and lay them flat on a clean baking sheet.
  3. Pat the shrimp dry. Melt 1 tablespoon of the butter in a large skillet over medium-high heat. Add the shrimp and cook for 2 to 3 minutes, stirring, until pink and opaque. Transfer to a bowl to cool.
  4. Mix the ricotta, egg, half of the Parmesan, half of the parsley, lemon juice, salt, black pepper, and red pepper flakes. Gently fold in the shrimp and crabmeat.
  5. Melt the remaining butter in a medium saucepan over medium heat. Add the garlic and cook for 30 seconds. Whisk in the flour for 1 minute, then gradually whisk in the milk and half-and-half. Simmer for 3 to 4 minutes until lightly thickened. Remove from the heat and whisk in the remaining Parmesan.
Assemble and Bake
  1. Spread about 1 cup of Alfredo sauce across the baking dish. Divide the seafood filling among the noodles, leaving a small edge clear, then roll each noodle from one short end.
  2. Arrange the rolls seam-side down. Spoon the remaining sauce over the top and sprinkle with the mozzarella.
  3. Cover with foil and bake for 15 minutes. Uncover and bake for 10 minutes more, until bubbling and lightly browned. Rest for 5 minutes, then scatter the remaining parsley over the top.

Notes

Assemble the roll-ups up to 1 day ahead and refrigerate them covered; add about 10 minutes to the covered bake if starting cold. Refrigerate leftovers for up to 3 days. Freeze baked portions for up to 1 month, knowing the Alfredo sauce may separate slightly after thawing.
