  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika for smoky depth

  • 4 ounces high-protein rotini uncooked
  • 1 cup reduced-sodium beef broth for simmering
  • 1/2 cup tomato sauce plain
  • 1/4 cup reduced-sugar barbecue sauce smoky style
  • 1 tablespoon honey for sauce
  • 1 teaspoon Dijon mustard for balance
  • 1/2 cup plain nonfat Greek yogurt room temperature
  • 1/4 cup reduced-fat sharp cheddar cheese shredded

Method
 

  1. Heat a large deep skillet or Dutch oven over medium-high heat.
  2. Add the kielbasa in a single layer. Cook for 4 minutes, turning occasionally, until the cut sides are deeply browned. Transfer to a plate.
  3. Reduce the heat to medium. Cook the onion in the rendered fat for 2 minutes, then stir in the garlic, smoked paprika, and pepper for 30 seconds.
  4. Add the beef broth, tomato sauce, barbecue sauce, honey, and Dijon. Scrape the browned bits from the bottom.
  5. Stir in the rotini and bring the sauce to a steady simmer.
  6. Cover, reduce the heat to medium-low, and cook for 8 to 10 minutes. Stir halfway through and add a splash of broth if the pan becomes dry before the pasta is tender.
  7. Return the kielbasa to the pan. Simmer uncovered for 2 minutes, until the pasta is tender and the sauce lightly coats it.
  8. Remove from the heat and wait 1 minute. Temper the Greek yogurt with a spoonful of hot sauce, then stir it into the pasta with the cheddar. Rest for 2 minutes before serving.

Notes

Refrigerate leftovers for up to 4 days and reheat gently with a splash of broth. Freezing is possible for up to 2 months, although the yogurt-based sauce may look slightly grainy after thawing. Regular rotini can replace high-protein rotini; begin checking it at the package’s minimum cooking time.
