Ingredients
  

Pasta and sausage
  • 12 ounces rigatoni uncooked
  • 1 pound mild Italian sausage casings removed
  • 1 tablespoon olive oil for the skillet
  • 1 teaspoon kosher salt divided
  • 1/2 teaspoon black pepper divided
Cream sauce
  • 1 small yellow onion finely diced
  • 4 cloves garlic minced
  • 1/2 teaspoon Italian seasoning dried
  • 1/4 teaspoon red pepper flakes optional
  • 1 cup chicken broth low sodium
  • 1 cup heavy cream room temperature
  • 1 cup Parmesan cheese finely grated
  • 2 tablespoons fresh parsley chopped, garnish

Method
 

Cook the pasta and sausage
  1. Bring a large pot of salted water to a boil. Cook the rigatoni until just shy of al dente, following the package timing. Reserve 1 cup pasta water, then drain.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the sausage and break it into small, chunky crumbles.
  3. Cook for 6 to 8 minutes, stirring occasionally, until the sausage is deeply browned and reaches 160°F. Transfer it to a plate, leaving the browned bits in the skillet.
Build the sauce
  1. Reduce the heat to medium. Add the onion and cook for 3 minutes, until softened. Stir in the garlic, Italian seasoning, red pepper flakes, remaining salt, and pepper; cook for 30 seconds.
  2. Pour in the chicken broth and scrape up the browned bits. Simmer for 2 minutes, until slightly reduced.
  3. Add the heavy cream and bring it to a gentle simmer. Cook for 3 to 4 minutes, stirring often, until the sauce lightly coats a spoon.
  4. Turn the heat to low. Stir in the Parmesan a little at a time until smooth. Don't let the sauce boil after adding the cheese.
  5. Add the rigatoni and sausage to the skillet. Toss until coated, adding reserved pasta water a splash at a time if the sauce is too thick.
  6. Rest the pasta for 2 minutes off the heat, then scatter with parsley and serve hot.

Notes

Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in a skillet or microwave with a splash of broth or water, since the sauce thickens as it cools. For a milder sauce, leave out the red pepper flakes.
