Prepare and Cook
- Cut the chicken into 1 1/2-inch chunks and the potatoes into 1-inch chunks.
- Season the chicken with half the salt, half the pepper, and the Italian seasoning. Season the potatoes with the remaining salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Brown the chicken in a single layer for 2 to 3 minutes per side, leaving the centers undercooked.
- Place the potatoes in the slow cooker. Add the browned chicken, garlic, chicken broth, and melted butter.
- Cover and cook on LOW for 3 to 3 1/4 hours, checking when the potatoes are fork-tender and the thickest chicken piece reaches 165°F.
Finish the Sauce
- Whisk the half-and-half and cornstarch in a small bowl until smooth.
- Pour the slurry into the slow cooker, cover, and cook on HIGH for 10 to 15 minutes, until the sauce looks glossy and lightly thickened.
- Turn off the slow cooker and stir in the Parmesan cheese and parsley.
- Cover and rest for 5 minutes before serving so the sauce clings to the chicken and potatoes.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of chicken broth; freezing is not recommended because the dairy sauce may split and the potatoes can become mealy.
