Ingredients

Main
  • 1 lb smoked sausage sliced
  • 12 oz penne pasta dry
  • 2 cups chicken broth liquid
  • 1 cup heavy cream liquid
  • 1 medium onion diced
  • 1 bell pepper diced
  • 3 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 tbsp Cajun seasoning blend
  • 1 tsp paprika smoked
  • Salt and pepper to taste
  • 1 cup Parmesan cheese grated
  • 2 tbsp olive oil extra virgin

Equipment

  • Large Pot
  • Wooden spoon
  • Chef Knife
  • Cutting board

Method

Main Instructions
  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Sauté the sliced sausage, diced onion, and bell pepper until the meat is browned and vegetables are soft.
  3. Add the minced garlic to the pot and cook for 60 seconds until fragrant.
  4. Pour in the diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper.
  5. Bring the liquid to a gentle boil before adding the uncooked penne pasta.
  6. Lower the heat and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking, until pasta is tender.
  7. Remove the pot from the heat and stir in the grated Parmesan cheese until the sauce is smooth and melted.

Notes

For the best results, ensure you stir the pot frequently during the simmering stage to help the pasta release starches, which thickens the sauce beautifully. If the sauce becomes too thick, simply splash in a little extra chicken broth to reach your desired consistency. Leftovers store well in an airtight container for up to three days and reheat best on the stovetop with a tablespoon of milk.
