Ingredients
  

Meatloaf Base
  • 1 lb ground beef 85/15 lean
  • 0.5 lb ground pork sausage mild
  • 0.5 cup breadcrumbs panko style
  • 1 large egg beaten
  • 1 tsp onion powder dried
  • 1 tsp garlic salt fine
Mushroom and Bacon Filling
  • 8 oz mushrooms sliced thin
  • 4 slices bacon chopped
  • 1 tbsp Worcestershire sauce liquid
  • 1.5 cups Swiss cheese shredded
  • 1 tbsp parsley fresh chopped

Method
 

Preparation and Sauté
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x5 inch loaf pan.
  2. In a skillet over medium heat, fry the chopped bacon until it begins to crisp.
  3. Add the sliced mushrooms to the bacon drippings and sauté until tender and browned.
  4. Remove the skillet from heat and stir in the Worcestershire sauce, then let it cool slightly.
Assembly and Baking
  1. In a large bowl, combine the ground beef, sausage, breadcrumbs, egg, onion powder, and garlic salt.
  2. Gently fold the sautéed mushroom and bacon mixture into the meat until just combined.
  3. Press half the meat mixture into the pan, sprinkle with 1 cup of Swiss cheese, then top with remaining meat.
  4. Bake for 50–55 minutes until the internal temperature reaches 160°F.
  5. Sprinkle the remaining Swiss cheese on top during the last 5 minutes of baking until melted.
  6. Let the loaf rest for 10 minutes before slicing to ensure it stays juicy.

Notes

For the best texture, avoid over-mixing the meat which can lead to a dense loaf. Store any leftovers in an airtight container for up to 4 days or freeze individual slices for easy meal prep.
