Ingredients

Sloppy Joe Base
  • 1.5 lb ground beef 85/15 lean
  • 1 large yellow onion small diced
  • 1 large green bell pepper small diced
  • 8 oz mushrooms finely chopped
  • 0.5 tsp salt to taste
  • 0.5 tsp black pepper cracked
Sauce and Assembly
  • 1 cup beef broth low sodium
  • 1 tbsp Worcestershire sauce original
  • 1 tbsp cornstarch for thickening
  • 6 slices provolone cheese or cheddar
  • 4 large brioche buns toasted

Equipment

  • Large Cast Iron Skillet
  • Wooden spoon
  • Knife
  • Cutting board

Method

Cook the Filling
  1. Brown the ground beef in a large skillet over medium-high heat until no longer pink, breaking it into small crumbles with a wooden spoon.
  2. Add the diced onion, green bell pepper, and chopped mushrooms to the skillet with the beef and sauté for 5–7 minutes until the vegetables are tender.
  3. Drain any excess grease from the pan to ensure the sauce isn't oily.
  4. Whisk together the beef broth, Worcestershire sauce, and cornstarch in a small bowl until smooth.
  5. Pour the sauce mixture into the skillet and simmer for 3–5 minutes until the liquid thickens and coats the meat.
  6. Season with salt and black pepper to taste, adjusting as needed for flavor balance.
  7. Lay the cheese slices over the top of the meat mixture, cover the skillet with a lid for 1 minute until the cheese is completely melted.
  8. Scoop the cheesy beef mixture onto toasted buns and serve immediately.

Notes

For the best texture, toast your buns with a little butter before serving to prevent the bread from getting soggy. Store leftover meat in an airtight container for up to 4 days and reheat in a skillet with a splash of broth.
