  • 2 large yellow onions thinly sliced
  • 2 tbsp unsalted butter for sautéing
  • 0.25 tsp salt to taste
Beef Patties
  • 1.5 lb ground beef 80/20 blend
  • 1 tsp garlic powder dried
  • 1 tsp onion powder dried
  • 0.5 tsp salt coarse
  • 0.5 tsp black pepper cracked
Assembly
  • 8 slices rye bread or sourdough
  • 8 slices Swiss cheese thick cut
  • 4 tbsp unsalted butter softened

Method
 

Caramelize and Prep
  1. Melt 2 tablespoons of butter in a skillet over medium-low heat and add sliced onions with a pinch of salt.
  2. Cook onions for 15–20 minutes, stirring occasionally, until deeply golden brown and soft, then set aside.
  3. Divide the ground beef into four equal portions and shape them into thin, oval patties that match the shape of your Patty Melt Bread.
  4. Season both sides of the beef patties generously with garlic powder, onion powder, salt, and black pepper.
Sear and Assemble
  1. Increase heat to medium-high and sear the patties for 3–4 minutes per side until a crust forms and they are fully cooked.
  2. Wipe the skillet clean and spread softened butter on one side of each bread slice.
  3. Place four slices of bread butter-side down in the skillet, topping each with a slice of Swiss cheese, a beef patty, a heap of caramelized onions, and a second slice of cheese.
  4. Top with the remaining bread slices, butter-side up, and grill for 2–3 minutes per side until the bread is golden and the cheese is gooey.

Notes

For the best results, use a heavy cast iron skillet to get that iconic diner crust. If you prefer a tangier flavor, spread a little Thousand Island dressing or Dijon mustard on the inside of the bread before assembling.
