Cook the Patties and Onions
- Mix the ground beef with 3/4 teaspoon kosher salt, black pepper, and garlic powder. Form into four thin oval patties about 1/3 inch thick.
- Melt 1 tablespoon butter in a 12-inch skillet over medium heat. Add the onion and remaining 1/4 teaspoon salt. Cook for 10 to 12 minutes, stirring often, until soft and browned at the edges.
- Transfer the onions to a plate. Increase the heat to medium-high and cook the patties in a single layer for 3 to 4 minutes per side, until browned and 160°F in the center.
Assemble and Grill
- Spread the remaining softened butter over one side of each bread slice.
- Build four sandwiches with one beef patty, one-fourth of the onions, and two cheese slices inside each.
- Reduce the skillet heat to medium. Grill the sandwiches buttered-side down in two batches for 2 to 3 minutes, until the bottoms are deeply golden.
- Flip the sandwiches, cover the skillet, and cook for 2 to 3 minutes more, until the second side is browned and the cheese is fully melted.
- Rest the sandwiches for 2 minutes, then slice and serve hot.
Notes
Refrigerate cooled patty melts for up to 3 days. For the best texture, freeze the cooked patties and onions separately for up to 2 months and assemble with fresh bread when ready to eat.
