- Preheat the oven to 375°F. Grease an 8-inch square baking dish with the olive oil.
- Place the broccoli in a microwave-safe bowl with 2 tablespoons water. Cover and microwave for 3 minutes, until bright green and crisp-tender.
- Drain the broccoli thoroughly and blot away surface moisture.
- Whisk the Greek yogurt, cream cheese, warm broth, garlic, onion powder, paprika, salt, and pepper until mostly smooth.
- Fold in the chicken, broccoli, and 1/2 cup cheddar until evenly coated.
- Spread the mixture in the baking dish and top with the remaining 1/4 cup cheddar. Bake uncovered for 20 minutes, until bubbling around the edges and 165°F in the center.
- Rest for 5 minutes before serving so the sauce can settle and thicken.
Notes
Refrigerate leftovers in an airtight container for up to 4 days. Reheat covered at 325°F or microwave in short intervals to keep the chicken tender. Frozen broccoli works if thawed and squeezed dry. Freezing the assembled casserole for up to 2 months is possible, though the broccoli softens and the sauce may separate slightly.
