Ingredients

Sliders
  • 2 teaspoons olive oil for skillet
  • 1 medium yellow onion thinly sliced
  • 12 Hawaiian sweet rolls attached slab
  • 1 pound deli roast beef thinly sliced
  • 4 ounces provolone cheese sliced
  • 2 tablespoons unsalted butter melted, divided
  • 1 tablespoon Worcestershire sauce divided
  • 1/2 teaspoon garlic powder for topping
  • 1 teaspoon poppy seeds optional topping
Au Jus
  • 2 cups low-sodium beef broth for dipping
  • 1 teaspoon reduced-sodium soy sauce for depth
  • 1/4 teaspoon black pepper freshly ground

Equipment

  • 9 X 13-Inch Baking Dish
  • large skillet
  • Small Saucepan
  • Serrated Knife
  • Pastry Brush

Method

Sliders
  1. Preheat the oven to 375°F. Brush a 9 x 13-inch baking dish with a little melted butter.
  2. Heat the olive oil in a large skillet over medium heat. Cook the onion for 5 minutes, stirring occasionally, until softened with golden edges.
  3. Slice the rolls horizontally through the center without separating them. Place the bottom slab in the baking dish.
  4. Layer half the provolone, all the roast beef, the onions, and the remaining provolone over the rolls. Add the top slab.
  5. Stir the remaining melted butter with 1 teaspoon Worcestershire sauce, garlic powder, and poppy seeds. Brush the mixture over the roll tops.
Au Jus and Finish
  1. Cover the baking dish with foil and bake for 10 minutes.
  2. While the sliders bake, combine the beef broth, remaining 2 teaspoons Worcestershire sauce, soy sauce, and black pepper in a saucepan. Simmer for 5 minutes.
  3. Uncover the sliders and bake for 5 minutes, until the cheese melts and the tops are golden. Let stand for 2 minutes, slice, and serve with warm au jus.

Notes

Refrigerate leftover sliders and au jus separately for up to 3 days. Reheat the sliders uncovered at 350°F until hot so the roll tops regain some texture. Assemble the filling up to 8 hours ahead, but wait to add the butter topping until baking. Baked sliders can be frozen for 1 month, although the rolls will be softer after thawing.
