Method
- Heat the oven to 375°F. Lightly coat a 9x13-inch baking dish with cooking spray.
- Stir the cream of chicken soup and sour cream together in a mixing bowl until smooth.
- Fold in the shredded chicken and 1/2 cup of the cheddar. Stir until the chicken is evenly coated.
- Spread the chicken mixture into the baking dish and smooth the surface.
- Sprinkle the remaining 1/2 cup cheddar evenly over the casserole.
- Scatter the crushed buttery crackers over the cheese, keeping the layer loose so it browns instead of steaming.
- Cover loosely with foil and bake for 12 minutes. Remove the foil and bake for 8 minutes more.
- Check that the center is bubbling and the cheese is fully melted. Rest for 5 minutes before serving.
Notes
Refrigerate leftovers in a covered container for up to 3 days. Reheat individual portions in the microwave or the full casserole covered at 325°F until hot; the cracker topping will soften slightly after storage. For a make-ahead casserole, assemble it without the cracker topping, cover, and refrigerate for up to 24 hours. Add the crackers just before baking.
