Ingredients

Casserole
  • 1 1/2 pounds cooked shredded chicken warm or room temperature
  • 10 1/2 ounces condensed cream of chicken soup 1 can
  • 1/2 cup sour cream full-fat preferred
  • 1 cup shredded sharp cheddar cheese divided
  • 1 cup buttery crackers crushed

Equipment

  • 9x13-Inch Baking Dish
  • Mixing bowl
  • Measuring Cups
  • Spoon
  • Aluminum Foil

Method

  1. Heat the oven to 375°F. Lightly coat a 9x13-inch baking dish with cooking spray.
  2. Stir the cream of chicken soup and sour cream together in a mixing bowl until smooth.
  3. Fold in the shredded chicken and 1/2 cup of the cheddar. Stir until the chicken is evenly coated.
  4. Spread the chicken mixture into the baking dish and smooth the surface.
  5. Sprinkle the remaining 1/2 cup cheddar evenly over the casserole.
  6. Scatter the crushed buttery crackers over the cheese, keeping the layer loose so it browns instead of steaming.
  7. Cover loosely with foil and bake for 12 minutes. Remove the foil and bake for 8 minutes more.
  8. Check that the center is bubbling and the cheese is fully melted. Rest for 5 minutes before serving.

Notes

Refrigerate leftovers in a covered container for up to 3 days. Reheat individual portions in the microwave or the full casserole covered at 325°F until hot; the cracker topping will soften slightly after storage. For a make-ahead casserole, assemble it without the cracker topping, cover, and refrigerate for up to 24 hours. Add the crackers just before baking.
