- Heat the oven to 375°F. Coat a 2 1/2-quart baking dish with the olive oil.
- Place the broccoli in a microwave-safe bowl with 1 tablespoon water. Cover and microwave for 2 minutes, until bright green but still firm.
- Drain the broccoli thoroughly and let it stand uncovered while preparing the sauce.
- Whisk the condensed soup, milk, garlic powder, onion powder, salt, and pepper in a large bowl until smooth.
- Fold in the chicken, rice, broccoli, and 1/2 cup cheddar without crushing the broccoli.
- Transfer the mixture to the baking dish. Sprinkle with the remaining 1/4 cup cheddar and the panko.
- Cover with foil and bake for 15 minutes.
- Remove the foil and bake for 5 minutes, until the edges bubble and the center reaches 165°F. Rest for 5 minutes before serving.
Notes
Refrigerate leftovers for up to 4 days or freeze for up to 2 months, though the broccoli and rice soften slightly after thawing. Cooked brown rice or well-drained thawed broccoli may be substituted without changing the baking time.
